Food culture of indigenous people in the Amazon

indigenous

Nature coexists with groups belonging to primitive linguistic families such as the Nukaks, still nomads, the Huitotos, Yaguas, Tucanos, Ticunas, Camsás and Ingas who, thanks to the dense jungle, have been able to save many of their customs and traditions. .

Their diet, which starting from its base, the fish, is prepared in various ways: fried, stewed, in sancocho and in broths, it is accompanied with great celebrity by farina - cassava flour that constitutes the indigenous diet -, aguadepanela and the chicha de platano.

But it is even more admirable to see the "three stone technique" for roasting and boiling food; Casabe, a kind of large arepa made with wild cassava flour, cannot be missed, as well as wheat bread and exotic fruits such as arazá, copoazú and Amazonian apple fruit.
